Skirt Steak

Hot and fast

A flavorful steak that’s fast and easy.

Buying:

Look for USDA Prime skirt steak with lots of marbling. Make sure to get the meat from butchers you trust.

Prepping:

In a blender, combine ⅔ cups olive oil, 4-6 shakes of Worcestershire sauce, and a glug of apple cider vinegar. Then, zest lime and lemon with a micro-plane grater into the blender. Then, juice the lime, lemon, and orange into the blender. Next, add half a head of garlic and a handful of washed cilantro. Blend this until fully combined.


Liberally coat the skirt steak with salt and pepper.

Finally, layer the brine and skirt steak into a container. Leave this mixture to marinate for up to 24 hours.

Grilling:

Crank the heat up, and allow the grill to get as hot as possible. 


Once the grill is at around 550F, cut the skirt steak into thirds, so it is more manageable. Place the steak onto the grill and sear it for 3-4 minutes on each side.


Lastly, allow the meat to rest for 10 minutes, and enjoy!
